this is the cake i took to crarf camp - easy peasy and yumbo bumbo
Kate's Cake (named for my lovely ex-colleague from the Premier's Dept who made it and thereby caused great swooning - miss you Kate)
150 grams almond meal (or ground rice is fine if you're dealing with nut allergies)
150 grams self raising flour
150 grams butter
150 grams sugar
300gram frozen berries or sim
1 egg
vanilla
put everything in a food processor and whizz until just combined
moosh into a cake tin, tip in the berries then dab bits of the cake mix over the top. sprinkle with more sugar if you feel like being fancy.
bake at 180 degrees until it looks cooked. there will be no leftovers, trust me....
btw the cake will look different depending on what size tin you use - more slice-like if you use a big tin as i did here or more cakey if you use a smaller tin - your choice, grasshopper

Um, I shall try this. I am not a good cook. (The worlds first exponent of the Roast Dinner Pizza complete with stuffing and roast potatoes). I'm taking the logical step of assuming almond meal is ground almonds....could it be anything else I wonder?

It really was perfect in every way. It continued the fine Craft Camp tradition of eating desserts for breakfast and most importantly; The Berries... oh, The Berries ! xxx It was lovely to meet you, I hope I can eventually figure out where we know each other from, it's been driving me bonkers!

I'll put my hand up to the success of this one too. It was the only reason that going to bed at 2am was a bad idea. It meant that I was that bit too late for the brekky leftovers with cream lashings...
